Le carni compatte e saporite vengono preparate in filetti e conservate sott’olio.
Il pesce spada viene tagliato a tranci, dissanguato in acqua corrente e posto in contenitori di acciaio colmi di acqua e sale per essere cotto. Il raffreddamento avviene a temperatura ambiente, segue la spellatura e l’eliminazione delle spine. Posizionato nei vasi di vetro ricoperto di olio d’oliva chiuso ermeticamente sottovuoto, pronto per la fase di sterilizzazione.
Può essere un buon secondo leggero ,oppure può essere utilizzato per fare dei piatti di pasta.
